Prof. Dr.(Mrs) Ibok N. Oduro is an associate professor as well as the head for the Biochemistry and Biotechnology and Food Science and Technology Departments of KNUST. She obtained her first degree in chemistry at the University of Ibadan, Nigeria in 1985 and later obtained an MSc in Inorganic Chemistry at the same university in 1987. She continued to the Silsoe College, Cranfield University, United Kingdom where she obtained her PhD. in Postharvest Technology in 1995.
Mrs. Oduro has contributed immensely in academia, research and extension where her passion lies. She believes that Africa can use its indigenous food resources to meet the needs of its people. As a result, she has shown keen interest in Postharvest research of indigenous crops of Africa including value addition to these crops to meet the nutritional needs of Africans. Her other areas of interest include Perishable crop processing, Food quality Assurance, Food product development, Minimal processing and Nutritional and food habits of Children and young adults.
